In the Classic Collection, I’ve distilled the process and design down to the essentials. Inspired by a small chef (of the same name in November 2023’s sale) this may be my new favorite in the classic series, and is certainly the most versatile. Shaped from a timeless high carbon steel and polished to an easy to maintain satin finish. In this case, I happened upon a very unique stash of prunings from a Bethlehem olive tree planted by the Romans for use on the full tang handle. Workhorse!
