Last summer, unable to work in the shop, I dreamed of a performance oriented chefs knife combining my favorite performance steel, a unique food release grind and favorite handle combos. Enter the Performance Series: thin, mono-steel chef knives with a sleek and durable stone-washed finish and food-releasing, weight-shedding, C-grind (right handed users). Comfortable rounded spine. Features dyed sycamore that I was processing in June 2024 when I clipped my hand on the bandsaw - it feels good to be back in the shop using that material. The geometry for this blade is based on one in our kitchen I made years ago and is one of our go-tos - its tapered gyuto blade is thin and light and versatile.
About C-grind: a fuller is ground into the backside to offer extreme food release to right handed users. The hollow ground portion of this blade works by reducing drag when cutting, and forces space between ingredients and the blade, releasing it with ease.
