6. Laminated Chef / Spalted Maple & Walnut

Laminated with love by hand in my shop. This large hybrid chefs knife features soft stainless cladding fused over a hard, high carbon 26C3 steel core. The tapered tang gives this chefs knife a balance unlike most and is handled in beautiful stabilized & reclaimed spalted Maple and Turkish Walnut bolster that was once a gun stock. Bronze and natural pins hold the stabilized handle to the tang. Gentle convex grind and thin behind the edge.

7. Petit Feathered Chef I

Forged with lots of love and a touch of anxiety - this is my favorite pattern to make with steel and still serves to be problematic and challenging - and maybe that is why I love it. It’s incredibly rewarding to build the feathered/flame pattern by repetitious cutting, welding and forging. But it’s really the last step that gets me, taking a billet of steel that you have meticulously cared for through steps and steps of repeated forging and splitting it down the middle to smear the pattern before welding it back together, creating the unmistakable feather pattern. The pattern you see on the blade is actually in the steel itself and will persist through uses though the initial high contrast etch may equalize, you will always see the pattern.

The contrasting alloys in the blade are sourced both from reclaimed lumber mill steel as well as virgin high carbon steel. The tapered full tang give this kitchen utility balance like no other. The handle is sculpted from beautiful striped Arizona Ironwood with a Smoked Birdseye Maple bolster. Three bronze pins represent the past, present and future as I honor my roots, focus on what is in front of me and contemplate the soon to be here changes that will accompany our first child, due August 25th.

8. Petit Feathered Chef II

9. Summer’s Fingerprint Chef / Spalted Maple

Forged with lots of love and joy - creating a fingerprint pattern with steel serves to be an incredibly joyful experience. It’s a light hearted day in the shop when I make this steel - repetitious, but random cutting, welding and forging. The pattern creates itself and is impossible to replicate. The contrasting alloys in the blade are sourced both from reclaimed lumber mill steel as well as virgin high carbon steel. The tapered full tang give this kitchen utility balance like no other. The handle is sculpted from Spalted Maple. Three copper pins represent the past, present and future, or the growing household I find myself preparing for with the coming of our first baby girl, due August 25th.

Forged to shape from a classic carbon steel known as 1084 and polished to a satin finish, I left just a touch of the hammer on this Japanese styled chef - a mix between a gyuto and santoku. This all purpose chefs knife features a tapered full tang which provides balance and strength. Handle is sculpted from Blue Smoke Sycamore and Arizona Ironwood. Natural pins.

The piece of steel I used came from the edge of the saw blade and I chose to leave artifacts of that past life near the tip of this blade - the valleys between the cutting teeth of a century+ old saw. 27. Granny Paring

I designed these after I found an antique fork with a simple bone handle. It struck me as the ultimate timeless tool - I loved the handle shape and size so much I started with that element and designed the blade to the handle.

On the porch slicing, in the garden for general cutting tasks. Make your own pouch and carry it with you. The small stature make them more versatile than may first meet the eye. The stout full tang gives each knife a trust worthy presence. The classic carbon steel is cold forged to shape by hand, using hammer and anvil.
